What is freeze drying?
Freeze drying (also known as lyophilization) is a water removal process typically used to preserve perishable materials, with the goal of extending their shelf life and/or preparing them for transport. Freeze drying works by freezing the material, then reducing the pressure and adding heat to allow the frozen water in the material to change directly to a vapor (sublimate).
What is different about freeze dried food?
Freeze drying removes moisture. It becomes shelf stable and no longer requires refrigeration or freezing. The texture changes as the water content is removed making chewy textures crunchy. Flavor is usually intensified. Sugar will bubble and expand.
How long does it take to freeze dry something?
It depends on the water content of the food. Salt water taffy may take around 8 hours. Fruit, because of the higher water content, may take anywhere from 24-48 hours to complete.
